Chablis is a true wine lover’s region that makes pure, terroir-driven and mineral wines from the Chardonnay grape. Situated as the most northerly wine region in Bourgogne, France, where there are 4 appellations that classify these wines: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. 

The main soils of Chablis are Jurassic limestone called Kimmeridgian soil. It is this special soil that is 150 million years old that is a contributing factor to the minerality, and ultimate badge of Chablis wine.

So much care goes in to the winemaking process starting with a manual harvest, and undergoing gentle, pneumatic pressing. This wine sees 10-12 months maturation in stainless steel tanks with 5% of the harvest seeing 5-6months in French oak. 

This Chablis encapsulates freshness with its energetic acidity that invigorates the palate alongside gala apple, lime, and pure mineral notes. It holds an exciting tension that doesn’t come across as a rigid structure, but instead a welcomed sip of well-balanced, thirst-quenching joy.

This Petit Chablis is held for around 9 months in steel vats, allowing the Chablis terroir to be purely reflected through the Chardonnay grapes. Light-bodied, with zippy acidity piercing through lime zest and honeysuckle notes. Fresh citrus and wet stone flavours resonate on a long finish. This wine is the perfect match for oysters, shrimp, and other seafood.
